Chef's Recommendation Wagyu Sukiyaki
Ishigaki beef is a Japanese black breed of beef that is produced and fattened in Yaeyama County, centered on Ishigaki Island, and meets certain conditions.
Raised in a warm climate and rich meadows, it has a good amount of fat, light flesh, and a sweet, flavorful taste.
We have prepared a sukiyaki that combines this Ishigaki beef with seasonal ingredients such as Chinese cabbage, white onion, garland chrysanthemum, and tofu, served with an elegant warishita of brown sugar and awamori.
